  • 4 slices cooked bacon (or turkey bacon/vegan alternative)

  • 1/2 avocado, sliced (optional)

  • 1/2 cup spinach or arugula

  • 1 tbsp butter (for toasting croissants)

  • Salt and pepper, to taste


Instructions

  • Prepare the croissants: Slice croissants horizontally and lightly butter the cut sides.

  • Toast the croissants: Place them in a skillet or toaster oven, buttered side down, and toast until lightly golden.

  • Cook the fillings: Scramble or fry the eggs and cook bacon if not pre-cooked.
